in June of 2004!  He began with

the block at left ....

And ...

As part of the Ste. Croix 2004 celebrations in St. Stephen, The Chocolate Museum partnered with Chef Evan Smith of the St. Andrews Fairmont Algonquin Hotel to sculpt “Ganong’s Evangeline” in chocolate! Using the image of Evangeline painted for Ganong Bros. Limited by Canadian artist John David Kelly in 1904 as his inspiration, Chef Smith created Evangeline from 220 kg./500 lbs. of chocolate!
